Job Description

The role of an Executive Chef is a pivotal position in leading the culinary operations and ensuring the highest quality of food and dining experiences for guests. As an Executive Chef, you will be responsible for menu planning, food preparation, kitchen management, and team supervision. This role requires exceptional culinary skills, strong leadership abilities, and a passion for delivering memorable culinary offerings. Responsibilities may include menu development, food cost control, staff training, quality assurance, and collaboration with other departments to create a cohesive guest experience.

Key Responsibilities

  • Plan and develop menus that align with the resort’s concept, guest preferences, and culinary trends. Create innovative and diverse dishes while considering dietary restrictions and nutritional balance.
  • Oversee and ensure the consistent preparation and presentation of high-quality dishes. Monitor portion sizes, flavor profiles, and food plating techniques to deliver visually appealing and delicious meals.
  • Efficiently manage all aspects of the kitchen, including food inventory, ordering, storage, and equipment maintenance. Implement and enforce proper food safety and sanitation practices.
  • Lead and manage the culinary team, including hiring, training, scheduling, and performance evaluations. Foster a positive work environment, mentor staff, and encourage professional growth and development.
  • Maintain high culinary standards and ensure consistency in taste, presentation, and service. Conduct regular inspections and tastings to monitor food quality and address any deviations.
  • Monitor food costs, portion control, and waste management to optimize profitability without compromising quality. Collaborate with the purchasing department to source ingredients at competitive prices.
  • Work closely with other departments, such as event planning, banquet operations, and food and beverage, to create cohesive dining experiences and ensure guest satisfaction.
  • Calculate food costs and recommend appropriate pricing strategies to maintain profitability while remaining competitive in the market.
  • Stay abreast of industry trends, new cooking techniques, and ingredients. Introduce innovative concepts and dishes to enhance the resort’s culinary offerings.
  • Train and develop the culinary team, conducting workshops and seminars to improve skills, knowledge, and productivity. Provide ongoing coaching and support to ensure consistent performance.
  • Ensure compliance with health, safety, and sanitation regulations. Maintain proper documentation and records related to food safety and kitchen operations.

Qualifications 

  • A degree or diploma in Culinary Arts or a related field is preferred. Extensive experience as a chef in a high-volume culinary operation, including leadership roles, is essential.
  • Excellent culinary skills and knowledge of various cuisines, cooking techniques, and food presentation. Ability to create and execute menus with diverse culinary offerings.
  • Strong leadership qualities to inspire and motivate a team. Effective management skills to oversee kitchen operations, staff, and resources.
  • Ability to develop unique and appealing dishes, incorporating culinary trends and local ingredients while meeting guest expectations.
  • Experience in menu planning, costing, and portion control to ensure profitability and manage food costs.
  • Excellent communication and interpersonal skills to collaborate effectively with staff, suppliers, and other departments. Ability to convey culinary concepts and instructions clearly.
  • Understanding of financial principles, including budgeting, cost analysis, and profit optimization.
  • In-depth knowledge of food safety and sanitation regulations, including HACCP guidelines. Certified in food safety and sanitation is desirable.
  • Ability to work in a fast-paced environment, adapt to changing priorities, and remain composed under pressure.
