The role of a South Indian Commi at a Lords 83 is a vital position within the culinary department, specializing in South Indian cuisine. As a South Indian Commi, you will contribute to the preparation and cooking of authentic South Indian dishes, ensuring the highest quality and flavors. Key Responsibilities

  • Assist in the preparation of South Indian cuisine ingredients, such as grinding spices, chopping vegetables, and marinating meats, while ensuring adherence to traditional techniques.
  • Cook South Indian recipes under the guidance of senior chefs, following traditional methods and ensuring authentic flavors. Monitor cooking times and temperatures for optimal taste and texture.
  • Plate and garnish South Indian dishes according to established standards, paying attention to traditional presentation styles and enhancing the visual appeal of the dish.
  • Maintain cleanliness and organization of the assigned workstation, including proper storage and labeling of ingredients, utensils, and equipment. Adhere to food safety and hygiene standards.
  • Monitor the quality of ingredients, ensuring freshness and proper storage. Report any concerns or issues to senior chefs or supervisors.
  • Work collaboratively with other members of the culinary team, assisting in various tasks and supporting a smooth flow of operations.
  • Familiarize yourself with the South Indian menu offerings, including regional specialties, traditional recipes, and specific flavor profiles. Be able to provide information and recommendations to guests when required.
  • Adhere to all health, safety, and sanitation regulations, including proper handling and storage of food, to maintain a safe and clean working environment.

Qualifications

  • Completion of a culinary program or relevant culinary certification is preferred. Specialization or knowledge in South Indian cuisine is highly desirable.
  • Prior experience working in a professional kitchen, preferably in a South Indian restaurant or culinary establishment, is an advantage.
  • Proficiency in South Indian cooking techniques, such as tempering, grinding spices, making traditional chutneys and curries, and preparing popular South Indian dishes like dosas, idlis, and vadas.
  • Strong attention to detail in food preparation, cooking, plating, and presentation to ensure high-quality South Indian culinary creations.
  • Ability to contribute ideas and suggestions for menu development, dish enhancements, and adaptations while maintaining the authenticity of South Indian cuisine.
  • Efficiently manage time and prioritize tasks to meet service demands and ensure timely delivery of dishes.
  • Willingness to work in a fast-paced and dynamic culinary environment, adapting to changing priorities and maintaining composure under pressure.
  • Excellent teamwork and communication skills to collaborate effectively with colleagues, superiors, and other departments within the resort.
  • Ability to work different shifts, including weekends and holidays, based on the operational needs of the resort.
  • Demonstrated passion for South Indian cuisine and a desire to continuously learn and develop new skills in preparing and presenting authentic dishes.
